책 소개

머리글박사학위 후 91년부터 미국 클렘슨대학에서 강의를 시작하고 학생들을 지도 했으니 벌써 27년이 지났지만 엊그제 일처럼 느껴진다. 수년전 아버지께서 90세 가 되셨을 때 기분이 어떠하신지 여쭈었더니 지금도 16세 소년 같다고 하셨는데 아마도 인간은 죽지 않고 영원히 살도록 만들어 졌는지도 모를 일이다. 지금도 학부 때와 박사과정 때 시험보면서 쩔쩔매는 꿈을 꾸곤하면서 지금도 학생같은 생각이 들곤 한다.대학을 다니면서 잘 모르면 후배에게라도 철저하게 물어서 공부하고 자기 것을 만드는 것을 목포로 삼았고 그 덕에 박사학위까지 무난히 마칠 수 있었다. 퇴계 이황선생님은 위기지학(爲己之學), 즉 남에게 보이기 위한 공부가 아니라 자신의 인격을 위한 공부를 해야 한다고 말씀하셨다. 쉽지 않은 일이다. 더구나 남보다 뛰어나지 못한 내가 지금에 자리에 올랐으니 항상 감사할 따름이다. 앞으 로 정년이 3년 남았는데 지금부터 정년 후 해야 할 일을 생각해야 할 것 같다. 지금도 생각하면 식품공학을 선택한 것이 참 잘한 일이다. 누구나 전공에 자부 심을 느끼지만 우리가 매일 먹는 음식을 평생 공부한다는 것은 큰 축복이다. 더구나 식품공학 전공자이다 보니 먹는 것에 항상 신경을 쓰고, 외국에 가면 특색있고 유명한 음식점에 꼭 들리곤 한다. 우리 모두가 즐겨하는 한식, 양식, 중식, 일식 그리고 그 외의 나라의 음식 또한 각자의 장점이 있다. 특히 외국을 여행하면서 먹었던 다양한 음식과 이들 음식의 재료와 만드는 과정을 공부하는 것은 매우 경이롭다. 시중에는 음식에 관한 다양한 책들이 있지만 일부 책들이 매우 과학적이지 못한 것을 보면서 식품공학을 연구하는 연구자로서 책임감을 느낀다.식품학이시습지 불역열호 (食品學而時習之 不亦說乎, 식품을 배우고 익히니 즐겁지 아니한가!)2022년 3월 안암동에서 박현진ForewordAlthough it has been thirty-one years since I finished my Ph.D. and began teaching at Clemson University in the U.S., 1991 still feels like yesterday. Even now, I still feel like a student and dream about my student days at night.Whenever I have problems with my research, I am happy to consult with anyone, even younger researchers. According to Mr. Lee Whang, who is one of the greatest people in Korea, you should study for your own personality, not for others to see. As everyone knows, it is not an easy world. I arrived at the position I hold today without any advantages—and for this, I always thank God. As I will retire in about three years, I am thinking now about what to do later.Food engineering was the right major to choose. I think that even now. I know that all scholars are proud of their areas of expertise. However, those of us who study “food,” which is something that we all need throughout our lives, have so many blessings. Because I specialize in food engineering, I always pay attention to what I eat. When I go abroad, I often stop at unique and famous restaurants; Korean, Western, Chinese, and Japanese food all have their pros and cons. It is especially wonderful to study the process of making various foods experienced while traveling abroad. Although there are various books on food on the market, many of them are not very scientific.
