책 소개

Korea, the country of fermentation In terms of geographical conditions, 70 percent of Korean territory is mountainous ; hence fertile land and open pastures are scarce, making unfavorable conditions for large-scale stockbreeding. Accordingly, since ancient times, agriculture evolved as the major industry and became the backbone of the national economy. Back then, stock farming was restricted to raising cattle needed for farming and rearing pigs and chickens for meat. The hot and humid summer was just right for rice growing. The long and dry winter, on the other hand, posed problems in food supply. Under such geographical and climatic conditions, Koreans were forced to develop a food preservation technique to secure a supply of protein as a replacement for meat in times of scarcity and survive through the long winter.
